Description

I make this Apricot and Honey Tart with a buttery homemade crust, creamy honey custard filling, and fresh ripe apricots glazed with honey. It’s a warm, elegant dessert that tastes like sunshine and comfort in every bite.


Ingredients

Scale
  • 200g all-purpose flour
  • 100g butter
  • 50g powdered sugar
  • 1 egg yolk
  • 23 tbsp cold water
  • 200ml heavy cream
  • 2 eggs
  • 60g honey
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 810 apricots
  • 3 tbsp honey
  • 1 tbsp melted butter

Instructions

  1. Mix flour, sugar, and salt.
  2. Rub in butter until crumbly.
  3. Add egg yolk and water to form dough.
  4. Chill dough for 30 minutes.
  5. Roll and line tart pan.
  6. Blind bake crust.
  7. Whisk cream, eggs, honey, vanilla, cornstarch.
  8. Pour filling into crust.
  9. Arrange apricots on top.
  10. Brush with honey and butter.
  11. Bake until golden and set.
  12. Cool before serving.

Notes

Always use ripe apricots for best flavor. Chill dough before baking to prevent shrinking. Add almonds for extra crunch. Let tart rest before slicing for best texture.
