- 6–8 apricots, halved
- 3 tbsp sugar
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 tbsp melted butter
- 1 egg (for egg wash)
- 1 tbsp apricot jam
- 1 tsp water
- Pinch of salt
Instructions
- Preheat oven to 200°C and prepare baking tray.
- Roll puff pastry and score edges.
- Prick center with fork and brush edges with egg wash.
- Arrange apricot halves on pastry.
- Add sugar, honey, vanilla, and butter.
- Bake until golden and caramelized.
- Heat apricot jam with water and brush glaze over tart.
- Cool slightly and serve warm.
