Bacon Breakfast Pigs in a Blanket are a cozy, delicious morning treat. Flaky puff pastry wrapped around mini sausages and crispy bacon makes a perfect breakfast or brunch dish full of warmth and love.

- 12 mini sausages
- 6 slices streaky bacon
- 1 sheet puff pastry, thawed
- 1 egg, beaten
- 12 small cheese cubes (optional)
- Pinch salt & black pepper
- Dash smoked paprika (optional)
Instructions
- Preheat oven to 200°C and line a baking tray with parchment paper.
- Partially cook bacon for 3-4 minutes, drain, and set aside.
- Cut puff pastry into 12 rectangles.
- Place half a slice of bacon, a mini sausage, and optional cheese on each rectangle. Season with salt, pepper, paprika.
- Roll pastry around sausage, sealing edges.
- Place seam-side down on tray, brush with beaten egg.
- Bake 15-20 min until golden and crisp.
- Cool 2-3 min before serving.
Notes
Add cheese for a gooey center. Partially cooking bacon prevents soggy pastry. Reheat in oven to keep pastry crisp.
