- 300g fusilli or penne pasta
- 200g sweetcorn
- 6 slices thick-cut smoked bacon
- 1 small red onion, finely diced
- 1 red bell pepper, diced
- 2 spring onions, sliced
- 100g cherry tomatoes, halved
- 100g cheddar cheese, cubed
- 3 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- 1 tbsp olive oil
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta until al dente, drain, and drizzle with olive oil.
- Crisp bacon in a pan and chop into pieces.
- Sauté onion and bell pepper, add corn, and cool.
- Whisk together mayonnaise, sour cream, mustard, paprika, salt, and pepper.
- Combine pasta, vegetables, bacon, tomatoes, and cheddar. Toss with dressing.
- Garnish with parsley and serve.
