- 250g pasta
- 1 bunch asparagus, chopped
- 200g mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 200ml heavy cream
- 50g Parmesan cheese, grated
- Salt to taste
- Black pepper to taste
- 1 teaspoon dried herbs
- Fresh parsley, chopped (optional)
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup pasta water before draining.
- Heat olive oil in a pan and sauté onion until soft.
- Add garlic and cook for 1 minute.
- Add mushrooms and cook until golden brown.
- Add asparagus and cook 3–4 minutes.
- Pour in cream and simmer gently.
- Stir in Parmesan, salt, pepper, and herbs.
- Add pasta and toss to coat. Use reserved pasta water if needed.
- Garnish with parsley and extra Parmesan, serve warm.
Notes
Use fresh Parmesan for best flavor. Avoid overcooking asparagus. Add a splash of cream when reheating to maintain sauce texture. Cream can be replaced with half-and-half for a lighter version.
