Description

This Best Cheesecake Recipe is creamy, rich, and perfect for any occasion. A buttery graham cracker crust and silky cream cheese filling with a hint of lemon zest make it irresistible. Ingredients

  • 200g graham crackers or digestive biscuits, finely crushed
  • 100g unsalted butter, melted
  • 2 tbsp sugar
  • 900g cream cheese, room temperature
  • 200g caster sugar
  • 3 large eggs, room temperature
  • 250ml sour cream
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 160°C (320°F). Wrap a 23cm springform pan in foil.
  2. Mix crust ingredients, press into pan, chill 15 min.
  3. Beat cream cheese with sugar until smooth. Add eggs one at a time.
  4. Fold in sour cream, vanilla, and lemon zest. Do not overmix.
  5. Pour filling over crust. Place pan in water bath.
  6. Bake 60–70 min. Center should jiggle slightly.
  7. Cool in oven 1 hour, then chill 4+ hours.
  8. Serve with fresh berries or whipped cream.

Notes

Use room-temperature ingredients to prevent lumps. Bake in a water bath to avoid cracks. Cheesecake flavors improve overnight. Can freeze slices for up to 2 months.
