- 200g graham crackers or digestive biscuits, finely crushed
- 100g unsalted butter, melted
- 2 tbsp sugar
- 900g cream cheese, room temperature
- 200g caster sugar
- 3 large eggs, room temperature
- 250ml sour cream
- 1 tsp vanilla extract
- Zest of 1 lemon
Instructions
- Preheat oven to 160°C (320°F). Wrap a 23cm springform pan in foil.
- Mix crust ingredients, press into pan, chill 15 min.
- Beat cream cheese with sugar until smooth. Add eggs one at a time.
- Fold in sour cream, vanilla, and lemon zest. Do not overmix.
- Pour filling over crust. Place pan in water bath.
- Bake 60–70 min. Center should jiggle slightly.
- Cool in oven 1 hour, then chill 4+ hours.
- Serve with fresh berries or whipped cream.
