Ingredients

  • 1 kg waxy potatoes, peeled and cut into chunks
  • 3 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 2 celery stalks, finely chopped
  • 1 small red onion, finely diced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • 2 tablespoons fresh parsley, chopped
  • Paprika for garnish

Instructions

  1. Boil potatoes in salted water until tender.
  2. Drain and let cool slightly.
  3. Chop eggs, celery, and red onion.
  4. Whisk together mayonnaise, Dijon mustard, vinegar, salt, pepper, and sugar.
  5. Fold in potatoes gently.
  6. Add eggs, celery, and onion.
  7. Mix lightly and fold in parsley.
