My Best Lemon Chicken Salad Recipe is fresh, zesty, and full of wholesome flavors. Juicy chicken breasts sit atop crisp greens, cherry tomatoes, cucumber, red onion, and creamy avocado, dressed in a tangy lemon vinaigrette perfect for a healthy, refreshing meal.


Ingredients

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 150g mixed salad greens
  • 1 cucumber, sliced
  • 10 cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • 50g crumbled feta cheese (optional)
  • Juice of 1 large lemon
  • 3 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat skillet with olive oil.
  2. Season chicken with salt and pepper.
  3. Cook chicken 6–7 minutes per side. Rest 5 minutes.
  4. Slice chicken thinly.
  5. Combine salad greens, cucumber, cherry tomatoes, red onion, avocado.
  6. Whisk lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.
  7. Drizzle dressing and toss salad.
  8. Top with sliced chicken and feta. Serve immediately.

Notes

Pound chicken for even cooking. Use fresh lemon juice for best flavor. Add dressing just before serving to keep salad crisp. Feta and nuts add extra texture and flavor.
