- 2 large chicken breasts
- 1 tbsp olive oil
- Salt and pepper, to taste
- 150g mixed salad greens
- 1 cucumber, sliced
- 10 cherry tomatoes, halved
- ½ red onion, thinly sliced
- 1 avocado, diced
- 50g crumbled feta cheese (optional)
- Juice of 1 large lemon
- 3 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- Salt and pepper to taste
Instructions
- Preheat skillet with olive oil.
- Season chicken with salt and pepper.
- Cook chicken 6–7 minutes per side. Rest 5 minutes.
- Slice chicken thinly.
- Combine salad greens, cucumber, cherry tomatoes, red onion, avocado.
- Whisk lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.
- Drizzle dressing and toss salad.
- Top with sliced chicken and feta. Serve immediately.
