- 6 cups fresh baby spinach, washed and dried
- 2 cups strawberries, hulled and sliced
- 1/2 cup crumbled feta cheese
- 1/3 cup chopped pecans, lightly toasted
- 1/4 red onion, thinly sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/3 cup extra virgin olive oil
- Salt and freshly ground black pepper, to taste
Instructions
- Wash and dry the spinach. Slice strawberries and red onion. Crumble feta.
- Toast pecans in a dry skillet 3–5 minutes until fragrant. Let cool.
- Whisk together balsamic vinegar, honey, olive oil, salt, and pepper for dressing.
- In a large bowl, combine spinach, strawberries, red onion, and pecans. Drizzle dressing and toss gently.
- Sprinkle feta on top before serving.
- Serve immediately.
Notes
Use fresh, ripe strawberries for best flavor. Toast pecans lightly to enhance nutty aroma. Store salad components separately for up to 2 days. Optional: add grilled chicken or shrimp for a main course.
