Ingredients
For the crust: – 200g all-purpose flour – 100g cold unsalted butter, cubed – 50g sugar – 1 egg yolk – 2–3 tablespoons cold water For the filling: – 250ml whole milk – 2 egg yolks – 60g sugar – 2 tablespoons cornstarch – 1 teaspoon vanilla extract – 20g butter For the topping: – 400g fresh strawberries, hulled – 2 tablespoons apricot jam
Instructions
1. Mix flour and sugar in a bowl, rub in cold butter until crumbly. 2. Add egg yolk and cold water, form a dough, wrap and chill 30 minutes. 3. Roll out dough and press into tart pan, prick with fork. 4. Bake at 180°C for 15–20 minutes until golden. Cool completely. 5. Heat milk in a saucepan. In a bowl, whisk egg yolks, sugar, cornstarch. 6. Slowly pour warm milk into egg mixture, whisking constantly. 7. Return to saucepan and cook until thick, stir in vanilla and butter, cool. 8. Spread custard evenly in tart shell. 9. Arrange strawberries on top and brush with warmed apricot jam.
Notes
Use the freshest strawberries for best flavor. Chill tart before serving for clean slices. Custard must be cooled before adding. Tart can be prepared a day ahead, adding strawberries just before serving.
