- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup olive oil
- 2 cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Pound chicken breasts to ½ inch thickness.
- Set up flour, egg, and breadcrumb stations.
- Dredge chicken: flour → egg → breadcrumb mixture.
- Fry chicken 3–4 min per side until golden.
- Preheat oven to 400°F (200°C).
- Spread sauce in baking dish, place chicken, top with more sauce and mozzarella.
- Bake 15–20 min, then broil 2–3 min for golden top.
- Garnish with fresh basil and serve.
Notes
Use panko for extra crunch. Don’t overcrowd the pan when frying. Broil briefly for golden cheese. Refrigerate leftovers up to 3 days and reheat in oven for best texture.
