Description

Enjoy my cozy and comforting Cheesy Low Carb Casseroles! This delicious recipe combines tender cauliflower, zucchini, shredded chicken, and three types of cheese for a hearty, guilt-free meal perfect for family dinners or meal prep.


Ingredients

  • 2 cups cauliflower florets, chopped small
  • 1 medium zucchini, diced
  • 1 cup cooked chicken breast, shredded
  • 1 cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ¼ cup parmesan cheese, grated
  • ¾ cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp cream cheese
  • 1 tbsp butter, for greasing the dish
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and grease casserole dish.
  2. Steam cauliflower until tender and drain.
  3. Mix cauliflower, zucchini, chicken, garlic, cream, cream cheese, paprika, salt, and pepper.
  4. Fold in cheddar and mozzarella, reserving some for topping.
  5. Pour mixture into casserole dish and smooth top.
  6. Sprinkle remaining cheddar and parmesan on top.
  7. Bake 25–30 mins until golden and bubbly.
  8. Let rest 5 mins before serving.

Notes

Steam vegetables to prevent sogginess. Mix cheeses well for perfect gooeyness. Assemble ahead for busy nights.
