Description

A warm, rustic French-inspired dessert made with juicy cherries baked in a soft almond custard. This Cherry and Almond Clafoutis is simple, comforting, and perfect for family gatherings or cozy evenings at home.


Ingredients

Scale
  • 300g cherries
  • 3 large eggs
  • 100g sugar
  • 100g plain flour
  • 250ml milk
  • 50g ground almonds
  • 30g melted butter
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • Pinch of salt
  • Flaked almonds

Instructions

  1. Preheat oven to 180°C and butter baking dish.
  2. Place cherries evenly in dish.
  3. Whisk eggs and sugar until light.
  4. Add vanilla, almond extract, and butter.
  5. Sift flour, salt, and almonds.
  6. Slowly add milk while whisking.
  7. Pour batter over cherries.
  8. Top with flaked almonds.
  9. Bake 35–40 minutes until golden.
  10. Cool slightly before serving.

Notes

Resting the batter improves texture. Serve warm for best flavor. Can substitute cherries with berries if needed. Store in fridge for up to 3 days.
