Description

I bake this Cherry Clafoutis with Almond Flour as a soft, rustic French-inspired dessert filled with juicy cherries and a delicate almond custard. It is simple, comforting, and perfect for family moments.


Ingredients

Scale
  • 2 cups cherries (pitted)
  • 1 cup almond flour
  • 3 large eggs
  • 1 cup milk
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 tbsp melted butter
  • 1/4 tsp salt
  • 1 tbsp cornstarch

Instructions

  1. Preheat oven to 180°C and butter baking dish.
  2. Spread cherries evenly in dish.
  3. Whisk eggs and sugar until smooth.
  4. Add all remaining ingredients and mix until smooth.
  5. Pour batter over cherries.
  6. Bake for 35–40 minutes until golden and set.
  7. Cool slightly and dust with powdered sugar before serving.

Notes

Use ripe cherries for best flavor. Almond milk can replace regular milk. Toast almond flour for deeper flavor. Store in fridge up to 3 days.
