Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups milk (dairy or plant-based)
  • ¼ cup maple syrup or honey
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, hulled and halved
  • ½ cup dark chocolate chips
  • 2 tablespoons coconut oil, melted

Instructions

  1. Preheat oven to 180°C (350°F) and grease an 8×8-inch baking dish.
  2. Mix oats, baking powder, salt, and cinnamon in a bowl.
  3. Whisk milk, maple syrup, eggs, and vanilla together.
  4. Combine wet and dry ingredients.
  5. Fold in strawberries and chocolate chips; reserve some for topping.
  6. Transfer to dish, smooth top, and sprinkle reserved ingredients.
  7. Bake 35–40 minutes until golden and set.
  8. Cool 5–10 minutes, slice, and serve warm.

Notes

Toss strawberries in flour to prevent sinking. Use dark chocolate for richer flavor. Store leftovers in fridge up to 4 days; freeze slices for up to 2 months.
