- 500g fresh strawberries, hulled and halved
- 100g granulated sugar
- 2 tsp fresh lemon juice
- 1 tsp lemon zest (optional)
- 1 tsp vanilla extract (optional)
- 2 tbsp water
Instructions
- Wash, hull, and halve the strawberries.
- In a saucepan, combine strawberries, sugar, lemon juice, lemon zest, and water.
- Cook over medium-low heat for 8–10 minutes, stirring occasionally, until strawberries release their juices.
- Check consistency; cook longer for thinner compote or stop earlier for chunky compote.
- Remove from heat and stir in vanilla extract.
- Let cool slightly before serving; it will thicken as it cools.
Notes
Use ripe, fragrant strawberries for best flavor. Add cornstarch slurry for thicker compote if desired. Store in the fridge for up to 5 days; freeze for up to 3 months. Perfect over pancakes, sponge cake, yogurt, or ice cream.
