- 200 g fresh asparagus
- 4 large eggs
- 240 ml heavy cream
- 120 ml whole milk
- 120 g grated Gruyère or cheddar cheese
- 1 small shallot, chopped
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
- 1 tablespoon chopped chives (optional)
Instructions
- Preheat oven to 180°C (350°F).
- Place pie crust in a pie pan and bake for 10 minutes.
- Trim asparagus and cut into pieces.
- Sauté shallots in olive oil for 2 minutes.
- Whisk eggs, cream, milk, salt, pepper, and nutmeg.
- Sprinkle cheese over crust.
- Add asparagus and shallots.
- Pour egg mixture over filling.
- Bake 35–40 minutes until set.
- Cool slightly before slicing.
Notes
Use fresh asparagus for the best flavor. Gruyère cheese adds a delicious nutty taste. Let the quiche rest before slicing so the filling sets properly. Store leftovers in the refrigerator for up to three days.
