Description

Cozy up with this Classic Chicken Noodle Soup! Tender chicken, fresh vegetables, and hearty noodles simmer in a golden broth for the ultimate comfort meal.


Ingredients

  • 1 whole chicken (34 lbs), cleaned
  • 10 cups water
  • 2 medium onions, halved
  • 3 large carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, smashed
  • 1 bay leaf
  • 1 tsp whole black peppercorns
  • Salt, to taste
  • 2 cups egg noodles
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1 tbsp olive oil or butter

Instructions

  1. Lightly roast the chicken with olive oil.
  2. Place chicken in a large pot, add water, onions, carrots, celery, garlic, bay leaf, peppercorns, and salt.
  3. Bring to boil, then simmer 1.5–2 hrs, skimming foam.
  4. Remove chicken, strain broth.
  5. Shred chicken, discard bones and skin.
  6. Cook noodles in broth until tender.
  7. Add shredded chicken, parsley, and thyme.
  8. Adjust salt, drizzle with olive oil or butter, serve warm.

Notes

  • Roasting chicken first deepens flavor.
  • Simmer broth slowly for clarity.
  • Store noodles separately if freezing.
  • Add lemon or pepper for brightness.
