- 1 whole chicken (3–4 lbs), cleaned
- 10 cups water
- 2 medium onions, halved
- 3 large carrots, sliced
- 3 celery stalks, sliced
- 4 garlic cloves, smashed
- 1 bay leaf
- 1 tsp whole black peppercorns
- Salt, to taste
- 2 cups egg noodles
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- 1 tbsp olive oil or butter
Instructions
- Lightly roast the chicken with olive oil.
- Place chicken in a large pot, add water, onions, carrots, celery, garlic, bay leaf, peppercorns, and salt.
- Bring to boil, then simmer 1.5–2 hrs, skimming foam.
- Remove chicken, strain broth.
- Shred chicken, discard bones and skin.
- Cook noodles in broth until tender.
- Add shredded chicken, parsley, and thyme.
- Adjust salt, drizzle with olive oil or butter, serve warm.
