- 1 cup whole milk, room temperature
- 4 cups fresh strawberries, hulled and sliced
- ¼ cup granulated sugar
- 2 cups heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare two 8-inch cake pans.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk.
- Divide batter into pans and bake 25–30 minutes.
- Cool cakes on wire racks.
- Macerate strawberries with sugar for 30 minutes.
- Whip cream with powdered sugar and vanilla until soft peaks form.
- Layer cake with cream and strawberries, finishing with whipped cream and strawberry topping.
Notes
Use room-temperature ingredients for fluffy cake layers. Assemble cake just before serving for best texture. Cake layers can be made ahead and frozen.
