Description
Classic Strawberry Tart is a fresh, elegant dessert with a buttery crust, creamy vanilla filling, and juicy strawberries topped with a shiny apricot glaze. Perfect for family gatherings, afternoon tea, or special occasions.
Ingredients
200g plain flour, 100g cold unsalted butter cubed, 50g icing sugar, 1 egg yolk, 2–3 tbsp cold water, 500ml whole milk, 4 egg yolks, 100g sugar, 40g cornstarch, 1 tsp vanilla extract, 30g butter, 400g fresh strawberries hulled and halved, 2 tbsp apricot jam
Instructions
1. Mix flour and icing sugar, rub in butter to form crumbs. 2. Add egg yolk and water; knead into dough and chill 30 min. 3. Roll dough, press into tart tin, prick base, bake at 180°C for 15–20 min, cool. 4. Heat milk gently. 5. Whisk egg yolks, sugar, and cornstarch. 6. Gradually add warm milk to yolks, return to pan, stir until thick. 7. Add vanilla and butter, cool. 8. Spread pastry cream on crust. 9. Arrange strawberries on top. 10. Brush apricot jam over strawberries.
Notes
Use the freshest strawberries available. Keep cream stirred constantly to avoid lumps. Chill tart before serving for best texture. Do not freeze fresh strawberries on top.
