- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 3 medium carrots, sliced
- 2 celery sticks, sliced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
- 2 cups egg noodles
- Juice of ½ lemon (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion until translucent.
- Stir in garlic and cook for 30 seconds.
- Add carrots and celery, cook until slightly softened.
- Pour in chicken broth, bring to a gentle boil.
- Add shredded chicken, thyme, parsley, salt, and pepper. Simmer 15 minutes.
- Stir in egg noodles, cook until tender (7–8 minutes).
- Adjust seasoning, add lemon juice, garnish with fresh parsley, and serve.
Notes
- Rotisserie chicken saves time and adds flavor.
- Noodles are best cooked fresh to prevent sogginess.
