Description

My Comforting Chicken Noodle Soup is a classic favorite with tender chicken, hearty vegetables, and flavorful noodles. Perfect for cozy family meals or when you need a warm hug in a bowl.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 celery sticks, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper, to taste
  • 2 cups egg noodles
  • Juice of ½ lemon (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent.
  2. Stir in garlic and cook for 30 seconds.
  3. Add carrots and celery, cook until slightly softened.
  4. Pour in chicken broth, bring to a gentle boil.
  5. Add shredded chicken, thyme, parsley, salt, and pepper. Simmer 15 minutes.
  6. Stir in egg noodles, cook until tender (7–8 minutes).
  7. Adjust seasoning, add lemon juice, garnish with fresh parsley, and serve.

Notes

  • Rotisserie chicken saves time and adds flavor.
  • Noodles are best cooked fresh to prevent sogginess.
