- 4 boneless, skinless chicken breasts
- Salt & pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 ½ cups breadcrumbs
- ½ cup grated parmesan cheese
- 2 cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp dried Italian herbs
- Fresh basil leaves
Instructions
- Preheat oven to 200°C (400°F).
- Season chicken with salt and pepper.
- Dredge chicken in flour, dip in eggs, coat with breadcrumb-parmesan.
- Heat olive oil in a skillet, sear chicken 2–3 minutes per side.
- Transfer chicken to baking dish.
- Spoon marinara sauce over chicken.
- Top with mozzarella and Italian herbs.
- Bake 20–25 minutes until cooked through.
- Garnish with basil and serve.
Notes
Pound chicken for even cooking. Use fresh parmesan for best flavor. Can assemble ahead and bake later. Store leftovers in fridge up to 3 days.
