- 1 cup (225g) unsalted butter, melted
- 2 cups (240g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 8 oz (225g) cream cheese, softened
- 1 large egg
- 1 1/2 cups (225g) fresh strawberries, chopped
- 2 tbsp cornstarch
- 1/4 cup (50g) brown sugar
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
- Mix melted butter, 1 cup sugar, and vanilla. Stir in flour and salt. Press half into pan.
- Beat cream cheese with egg and remaining sugar. Spread over crust.
- Toss strawberries with cornstarch and brown sugar; sprinkle over cream cheese.
- Crumble remaining dough on top. Bake 35-40 mins until golden. Cool completely.
- Dust with powdered sugar and cut into bars.
Notes
Chill dough before baking for extra soft crust. Use room-temperature cream cheese for smooth filling. Store bars in fridge for up to 4 days or freeze for longer. Serve with whipped cream or ice cream for extra indulgence.
