- 1 premade 9-inch pie crust
- 1 cup fresh asparagus, chopped
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 1 small shallot, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Place the pie crust into a quiche or pie dish.
- Heat olive oil in a skillet and sauté asparagus and shallots for 3–4 minutes.
- In a bowl whisk eggs, heavy cream, milk, salt, pepper, and nutmeg.
- Stir in shredded Gruyère and Parmesan cheese.
- Spread sautéed asparagus evenly in the crust.
- Pour egg mixture over the vegetables.
- Bake for 35–40 minutes until set and lightly golden.
- Allow the quiche to rest for 10 minutes before slicing.
Notes
For extra flavor add cooked bacon or mushrooms. Store leftovers in the refrigerator for up to 4 days. Reheat slices in the oven at 325°F for best texture. This quiche can also be frozen for up to 2 months.
