Description

Ingredients

  • 2 large chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: a pinch of nutmeg

Instructions

  1. Cook fettuccine in salted water until al dente; drain, reserving 1 cup pasta water.
  2. Heat olive oil in a skillet and cook chicken until golden brown; remove and set aside.
  3. Melt butter in the skillet; sauté garlic until fragrant.
  4. Add cream and milk, simmer gently.
  5. Gradually stir in Parmesan until smooth.
  6. Season with salt, pepper, and nutmeg.
  7. Toss pasta and chicken in the sauce until fully coated.

Notes

Use freshly grated Parmesan for a smoother sauce. Adjust creaminess with reserved pasta water. Store leftovers in the fridge for up to 3 days; reheat gently with a splash of milk.
