- 3 large eggs
- 200 g mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 small red onion, finely chopped
- 2 celery stalks, diced

- 1 tsp salt
- ½ tsp black pepper
- Optional: pinch smoked paprika
Instructions
- Boil potatoes until tender.
- Boil eggs, peel, chop.
- Chop cooled potatoes.
- Mix mayonnaise, mustard, vinegar, salt, and pepper.
- Add onion, celery, parsley.
- Fold in potatoes and eggs gently.
- Chill 1 hour.
- Garnish with paprika and serve.
