Description

My Creamy Classic Potato Salad is a comforting, easy-to-make side dish perfect for family gatherings, picnics, or barbecues. Tender potatoes, boiled eggs, fresh herbs, and a rich mayonnaise-mustard dressing combine to create a creamy, flavorful salad everyone will love.


Ingredients

  • 1 kg potatoes
  • 3 large eggs
  • 200 g mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 small red onion, finely chopped
  • 2 celery stalks, diced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: pinch smoked paprika

Instructions

  1. Boil potatoes until tender.
  2. Boil eggs, peel, chop.
  3. Chop cooled potatoes.
  4. Mix mayonnaise, mustard, vinegar, salt, and pepper.
  5. Add onion, celery, parsley.
  6. Fold in potatoes and eggs gently.
  7. Chill 1 hour.
  8. Garnish with paprika and serve.

Notes

Use waxy potatoes to keep texture. Chill before serving for best flavor. Make ahead for parties or picnics.
