Description

This creamy low carb casserole is packed with chicken, zucchini, broccoli, and cheese. Perfect for a quick weeknight meal, it’s hearty, comforting, and easy to make. A family favorite that’s both satisfying and low carb!


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 medium zucchini, sliced thin
  • 1 cup broccoli florets
  • 1/2 cup cauliflower, chopped small
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat oven to 180°C (350°F) and grease a casserole dish.
  2. Sauté onion and garlic in olive oil until fragrant.
  3. Add zucchini, broccoli, cauliflower; cook 5 minutes with seasoning.
  4. Mix cream cheese, heavy cream, Parmesan, and half cheddar until smooth.
  5. Fold chicken and vegetables into cheese mixture; adjust seasoning.
  6. Pour into casserole dish, sprinkle remaining cheddar on top.
  7. Bake 25-30 minutes until golden and bubbly.
  8. Let rest 5 minutes before serving.
