- 2 cups cooked chicken, shredded or diced
- 1 medium zucchini, sliced thin
- 1 cup broccoli florets
- 1/2 cup cauliflower, chopped small
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded cheddar cheese
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt & pepper to taste
- 2 tbsp olive oil or butter
Instructions
- Preheat oven to 180°C (350°F) and grease a casserole dish.
- Sauté onion and garlic in olive oil until fragrant.
- Add zucchini, broccoli, cauliflower; cook 5 minutes with seasoning.
- Mix cream cheese, heavy cream, Parmesan, and half cheddar until smooth.
- Fold chicken and vegetables into cheese mixture; adjust seasoning.
- Pour into casserole dish, sprinkle remaining cheddar on top.
- Bake 25-30 minutes until golden and bubbly.
- Let rest 5 minutes before serving.
