Description
This creamy street corn pasta salad with lime dressing combines smoky sweet corn, tender pasta, and a bright, zesty dressing. It’s comforting, fresh, and perfect for summer gatherings, family meals, or make-ahead lunches.

- 300 g short pasta
- 2 cups sweet corn kernels
- 120 ml mayonnaise
- 80 ml sour cream
- 1 lime, zested and juiced
- 1 clove garlic, minced
- 1 tsp smoked paprika
- 0.5 tsp chilli powder
- 0.5 small red onion, finely chopped
- 30 g fresh coriander, chopped
- 60 g feta or cotija cheese, crumbled
- Salt and black pepper to taste
Instructions
- Cook the pasta in well-salted boiling water until just tender. Drain and let cool slightly.
- Heat a pan over medium-high heat and char the corn until lightly browned and fragrant.
- In a bowl, whisk mayonnaise, sour cream, lime zest, lime juice, garlic, smoked paprika, and chilli powder.
- Add pasta, corn, red onion, and coriander to the dressing and gently toss to coat.
- Finish with crumbled cheese, season to taste, and serve chilled or at room temperature.
Notes
For extra flavour, add grilled chicken or avocado. Store leftovers in an airtight container in the fridge for up to 3 days. Stir and refresh with extra lime juice before serving.
