Crispy Chicken Parmesan is my ultimate comfort dish: juicy chicken coated in a golden breadcrumb-Parmesan crust, topped with tangy marinara sauce and melted mozzarella. Simple, family-friendly, and perfect for cozy dinners.

- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt & pepper, to taste
- 1/2 cup olive oil
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil leaves
Instructions
- Preheat oven to 200°C (390°F).
- Set up three shallow dishes: flour, beaten eggs, panko-Parmesan mix.
- Season chicken with salt, pepper, garlic powder, oregano, basil.
- Dredge in flour, dip in eggs, coat in panko-Parmesan.
- Fry in olive oil until golden, 3–4 minutes per side.
- Transfer to baking dish, spoon marinara over chicken.
- Top with mozzarella cheese.
- Bake 15–20 minutes until cheese bubbles.
- Garnish with fresh basil and serve.
Notes
- Use panko breadcrumbs for extra crispiness.
- Broil 2–3 minutes for golden, bubbly cheese.
- Can prep chicken a day ahead and bake when ready.
