Description

Crispy Roasted Asparagus with Parmesan is a simple and flavorful side dish perfect for weeknights or special occasions. Tender asparagus roasted to perfection with olive oil, salt, pepper, and finished with freshly grated Parmesan and a hint of lemon zest for a burst of freshness.


Ingredients

  • 1 pound (450g) fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Trim asparagus and pat dry. Spread evenly on a baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and garlic powder. Toss to coat.
  4. Roast for 12–15 minutes until tender and slightly crisp.
  5. Sprinkle Parmesan in the last 3 minutes and let it melt and crisp.
  6. Remove from oven, add lemon zest, and serve immediately.

Notes

Use freshly grated Parmesan for best crispiness. Keep spears spaced apart for even roasting. Reheat in the oven to maintain crispiness. Can be prepared ahead and roasted before serving.
