Description

This Croissant Egg Bake for Two is a cozy, comforting breakfast with buttery croissants, creamy eggs, cheese, and optional bacon or spinach. Perfect for weekend mornings or a special brunch, it’s quick to make, customizable, and always delicious.


Ingredients

  • 2 large buttery croissants
  • 3 large eggs
  • ½ cup whole milk
  • ½ cup shredded cheddar cheese
  • 2 slices cooked bacon, chopped (optional)
  • 1 small handful fresh spinach (optional)
  • Salt and pepper, to taste
  • ½ tsp Dijon mustard (optional)
  • Butter, for greasing the dish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a small baking dish with butter.
  2. Tear croissants into bite-sized pieces and place in the dish.
  3. Whisk eggs, milk, Dijon mustard, salt, and pepper.
  4. Sprinkle cheese over croissants; add bacon and spinach if using.
  5. Pour egg mixture over croissants, gently pressing to coat.
  6. Bake 20–25 minutes until eggs set and top is golden.
  7. Let rest 5 minutes before serving.

Notes

Use day-old croissants for best texture. Add vegetables or meats to customize. Store leftovers in fridge for up to 2 days.
