  • 1 lb (450g) ground beef, lean
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 can (14 oz / 400g) kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté 3–4 minutes.
  2. Add garlic and cook 30 seconds.
  3. Add ground beef and brown thoroughly.
  4. Add diced bell peppers and cook 2–3 minutes.
  5. Stir in spices and cook 1 minute to bloom flavors.
  6. Add tomato paste, diced tomatoes, and beef broth. Bring to boil, then simmer 20–25 minutes.
  7. Add kidney beans and simmer 10 minutes until thickened.
  8. Adjust seasoning. Garnish with fresh herbs before serving.
