- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can (14 oz / 400g) diced tomatoes
- 1 can (14 oz / 400g) kidney beans, drained and rinsed
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp cayenne pepper (optional)
- 1 tsp salt
- ½ tsp black pepper
- 2 tsp olive oil
- Fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and sauté 3–4 minutes.
- Add garlic and cook 30 seconds.
- Add ground beef and brown thoroughly.
- Add diced bell peppers and cook 2–3 minutes.
- Stir in spices and cook 1 minute to bloom flavors.
- Add tomato paste, diced tomatoes, and beef broth. Bring to boil, then simmer 20–25 minutes.
- Add kidney beans and simmer 10 minutes until thickened.
- Adjust seasoning. Garnish with fresh herbs before serving.
