- 400g fettuccine or pasta of your choice
- 2 large chicken breasts, thinly sliced
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 ½ cups heavy cream
- 1 cup freshly grated parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp nutmeg (optional)
- Fresh parsley, chopped
Instructions
- Cook pasta according to package directions; reserve ½ cup water.
- Sauté chicken in olive oil until golden; set aside.
- Melt butter, add garlic, sauté 1–2 mins.
- Pour cream, simmer 3–4 mins.
- Stir in parmesan until smooth; season with salt, pepper, nutmeg.
- Toss pasta and chicken in sauce; loosen with reserved water if needed.
- Garnish with parsley and extra parmesan.
Notes
- Use freshly grated parmesan for best results.
- Add a pinch of nutmeg for warmth.
- Store leftovers in fridge for up to 3 days; reheat with cream.
