- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 3 medium carrots, sliced thin
- 2 celery stalks, sliced thin
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- 2 cups egg noodles
- Salt to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft.
- Add carrots and celery, cooking for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat to simmer, add shredded chicken, thyme, parsley, and pepper. Simmer 15 minutes.
- Stir in noodles and cook 6–8 minutes until tender.
- Adjust salt, remove from heat, garnish with fresh parsley, and serve hot.
Notes
Use rotisserie chicken for convenience. Noodles should be added last to avoid sogginess. Store leftovers in the fridge up to 3 days.
