- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 2 cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 200°C (400°F).
- Set up three shallow bowls: flour, beaten eggs, breadcrumb-Parmesan mixture.
- Dredge chicken in flour, dip in eggs, coat in breadcrumbs.
- Heat olive oil and butter in skillet over medium heat; brown chicken 3–4 mins per side.
- Pour marinara sauce over chicken, sprinkle mozzarella on top.
- Bake 15–20 mins until cheese melts and bubbles.
- Garnish with basil and serve immediately.
Notes
Pat chicken dry before coating for best crust. Use panko for extra crunch. Make ahead by prepping chicken and coating, bake from chilled or frozen. Store leftovers in fridge up to 3 days, reheat in oven.
