- 3 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup finely chopped red onion
- 1/2 cup celery, chopped

- 1 teaspoon apple cider vinegar
- 1 teaspoon sugar
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish

Instructions
- Boil potatoes until tender, drain, and cool slightly.
- Boil eggs, cool, peel, and chop.
- Mix mayonnaise, Dijon mustard, relish, vinegar, sugar, salt, and pepper.
- Fold potatoes, eggs, celery, and onion into the dressing.
- Chill for at least 1 hour.
- Garnish with parsley and paprika before serving.
