Description

My Easy Classic Potato Salad is a creamy, comforting side that’s perfect for any occasion. Soft potatoes, hard-boiled eggs, crisp celery, red onion, and a tangy mayonnaise-mustard dressing come together for a timeless dish. Sweet pickle relish adds a subtle zing, while parsley and paprika add color. Ideal for family meals, picnics, or barbecues, this recipe is simple, quick, and full of love.


Ingredients

  • 1.5 pounds (700g) potatoes, peeled and diced
  • 3 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup finely chopped red onion
  • 1/2 cup celery, chopped
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Paprika, for a sprinkle

Instructions

  1. Boil potatoes until tender, drain, and cool slightly.
  2. Boil eggs, cool, peel, and chop.
  3. Mix mayonnaise, Dijon mustard, relish, vinegar, sugar, salt, and pepper.
  4. Fold potatoes, eggs, celery, and onion into the dressing.
  5. Chill for at least 1 hour.
  6. Garnish with parsley and paprika before serving.

Notes

Use waxy potatoes for the best texture. Boil eggs with salt and vinegar for easy peeling. Make ahead — flavors improve after chilling.
