Description

This easy lemon chicken salad is bright, fresh, and packed with flavor. Tender cooked chicken rests on crisp greens, cucumber, cherry tomatoes, and red onion, all tossed in a zesty lemon dressing and topped with feta and fresh herbs.


Ingredients

  • 2 large chicken breasts, cooked and sliced
  • 4 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • Fresh herbs (parsley or dill), chopped

Instructions

  1. Cook chicken and slice.
  2. Prepare vegetables and salad greens.
  3. Whisk lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.
  4. Combine greens, cucumber, tomatoes, onion.
  5. Top with chicken slices.
  6. Drizzle dressing over salad.
  7. Sprinkle feta and herbs.
  8. Toss gently before serving.

Notes

Use leftover chicken for convenience. Keep dressing separate until serving to keep greens crisp. Optional: add avocado or nuts for extra texture.
