- 500g chicken breast or thighs, diced
- 200g broccoli florets
- 150g cauliflower, chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 200g mushrooms, sliced
- 150g cream cheese
- 150ml heavy cream
- 100g grated cheddar cheese
- 50g grated parmesan cheese
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 180°C (350°F).
- Sauté onions and garlic in olive oil until soft.
- Add chicken, season with paprika, salt, and pepper, cook until browned.
- Add mushrooms, cook 3–4 minutes, then remove from heat.
- Whisk cream cheese and heavy cream, stir in half cheddar and all parmesan.
- Layer broccoli, cauliflower, and chicken mixture in a casserole dish.
- Pour cream mixture over top, sprinkle remaining cheddar.
- Bake uncovered 25–30 minutes until golden and bubbly.
- Garnish with parsley before serving.
Notes
Roast broccoli and cauliflower first for extra flavor. Make ahead: assemble a day prior, refrigerate, and bake next day. Leftovers last up to 3 days in the fridge.
