Ingredients

  • 2 tablespoons olive oil
  • 1 lb (450 g) chicken breasts or thighs
  • 1 medium zucchini, spiralized
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/4 cup heavy cream or coconut cream
  • Fresh herbs for garnish

Instructions

  1. Cut chicken into bite-sized pieces. Chop vegetables and spiralize zucchini.
  2. Heat olive oil in a skillet. Season chicken with paprika, thyme, salt, and pepper. Cook 6–8 minutes until golden and cooked through.
  3. Add onions, garlic, cauliflower, broccoli, and bell peppers. Cook 5–6 minutes until tender-crisp.
  4. Return chicken to skillet. Add cream and half the cheese. Stir until melted.
  5. Toss in zucchini noodles for 2–3 minutes until tender.
  6. Sprinkle remaining cheese and fresh herbs. Serve immediately.

  • Prep ingredients the night before to save time.
