- 1 lb (450 g) chicken breasts or thighs
- 1 medium zucchini, spiralized
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/4 cup heavy cream or coconut cream
- Fresh herbs for garnish
Instructions
- Cut chicken into bite-sized pieces. Chop vegetables and spiralize zucchini.
- Heat olive oil in a skillet. Season chicken with paprika, thyme, salt, and pepper. Cook 6–8 minutes until golden and cooked through.
- Add onions, garlic, cauliflower, broccoli, and bell peppers. Cook 5–6 minutes until tender-crisp.
- Return chicken to skillet. Add cream and half the cheese. Stir until melted.
- Toss in zucchini noodles for 2–3 minutes until tender.
- Sprinkle remaining cheese and fresh herbs. Serve immediately.
