Description

This Easy Spring Pea Salad is fresh, vibrant, and full of flavor. Perfect as a light lunch, side dish, or picnic treat.


Ingredients

Scale
  • 300g fresh or frozen peas
  • 100g sugar snap peas, trimmed
  • 50g baby spinach or mixed greens
  • 1 small red onion, thinly sliced
  • 50g feta cheese, crumbled (optional)
  • 1 handful fresh mint leaves, chopped
  • 1 handful fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and black pepper, to taste
  • Optional: toasted pine nuts or almonds

Instructions

  1. Blanch peas in boiling salted water for 2–3 minutes, then rinse under cold water.
  2. Blanch sugar snap peas for 1–2 minutes until crisp-tender.
  3. Combine peas, sugar snap peas, spinach, and red onion in a bowl.
  4. Add mint, parsley, and crumbled feta if using.
  5. Drizzle with olive oil and lemon juice, season with salt and pepper.
  6. Toss gently until evenly coated.
  7. Sprinkle toasted nuts on top if desired.
  8. Serve immediately or chill 15–20 minutes.

Notes

Use fresh herbs for best flavor. Blanch frozen peas to preserve color and sweetness. Keep dressing separate if storing overnight.
