Description

Easy Strawberry Rhubarb Crisp is a cozy homemade dessert made with sweet strawberries, tart rhubarb, and a buttery golden oat crumble topping. This simple fruit crisp is perfect served warm with vanilla ice cream.


Ingredients

  • 3 cups fresh strawberries, sliced
  • 2 cups rhubarb, chopped
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 cup all-purpose flour
  • ¾ cup rolled oats
  • ¾ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Grease a baking dish.
  3. Combine strawberries, rhubarb, sugar, cornstarch, vanilla, lemon juice, and salt.
  4. Pour fruit mixture into baking dish.
  5. Mix flour, oats, brown sugar, cinnamon, and salt.
  6. Add melted butter and mix until crumbly.
  7. Sprinkle topping over fruit.
  8. Bake 35–40 minutes until golden and bubbly.
  9. Cool slightly before serving.
