- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup sliced almonds, toasted
- 1/4 cup red onion, thinly sliced
- 1/3 cup mayonnaise
- 3 tablespoons apple cider vinegar
- 3 tablespoons honey
- 1 teaspoon poppy seeds
- Pinch of salt and pepper
Instructions
- Wash and dry the baby spinach thoroughly.
- Hull and slice the strawberries evenly.
- Toast almonds lightly in a dry skillet (optional).
- Thinly slice the red onion.
- Whisk together mayonnaise, apple cider vinegar, honey, poppy seeds, salt, and pepper to make the dressing.
- Combine spinach, strawberries, almonds, red onion, and feta in a large bowl.
