Description

This Easy Strawberry Spinach Salad with Poppy Seed Dressing is fresh, colorful, and perfect for family meals. Tender spinach, juicy strawberries, crumbled feta, and toasted almonds tossed in a creamy poppy seed dressing make this salad irresistible.


Ingredients

  • 6 cups fresh baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons honey
  • 1 teaspoon poppy seeds
  • Pinch of salt and pepper

Instructions

  1. Wash and dry the baby spinach thoroughly.
  2. Hull and slice the strawberries evenly.
  3. Toast almonds lightly in a dry skillet (optional).
  4. Thinly slice the red onion.
  5. Whisk together mayonnaise, apple cider vinegar, honey, poppy seeds, salt, and pepper to make the dressing.
  6. Combine spinach, strawberries, almonds, red onion, and feta in a large bowl.
  7. Drizzle dressing over salad and toss gently.
  8. Serve immediately or refrigerate dressing separately and toss before eating.

Notes

Prepare ingredients ahead of time, but toss salad just before serving. Substitute feta with goat cheese if preferred. Toast almonds for added crunch and flavor.
