- 6 cups fresh baby spinach, washed and dried
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese (optional)
- 1/4 red onion, thinly sliced
- 3 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
- Wash and dry the baby spinach thoroughly.
- Hull and slice the strawberries.
- Toast the almonds in a dry pan over medium heat until fragrant.
- Thinly slice the red onion and crumble the feta cheese.
- Whisk together balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.
- Gently toss all salad ingredients with the dressing.
- Serve immediately, optionally garnishing with extra almonds.
Notes
Toast almonds for extra flavor. Slice strawberries just before serving. Store salad and dressing separately if making ahead.
