- 1 ½ cups (190g) all-purpose flour
- ½ cup (115g) unsalted butter, cold
- ¼ cup (50g) sugar
- 1 egg yolk
- 2–3 tbsp cold water
- 1 cup (240ml) heavy cream
- ½ cup (120g) cream cheese, softened
- ⅓ cup (65g) sugar
- 1 tsp vanilla extract
- 2 cups fresh strawberries, hulled and halved
- 2 tbsp strawberry jam
Instructions
- Mix flour and sugar, then rub in cold butter until crumbly.
- Add egg yolk and cold water, form dough, and chill for 30 minutes.
- Roll out dough and press into tart pan. Prick base and bake at 180°C (350°F) for 15–20 minutes. Cool completely.
- Beat cream cheese and sugar until smooth, add vanilla extract and heavy cream, mix until fluffy.
- Spread filling over cooled crust.
- Arrange strawberries on top.
- Warm strawberry jam and brush over fruit for glaze.
- Chill tart for at least 1 hour before serving.
