Description

This Easy Strawberry Tart Recipe features a buttery, flaky crust, creamy filling, and fresh juicy strawberries topped with a glossy jam glaze. Perfect for afternoon tea, family gatherings, or a simple elegant dessert.


Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (115g) unsalted butter, cold
  • ¼ cup (50g) sugar
  • 1 egg yolk
  • 23 tbsp cold water
  • 1 cup (240ml) heavy cream
  • ½ cup (120g) cream cheese, softened
  • ⅓ cup (65g) sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, hulled and halved
  • 2 tbsp strawberry jam

Instructions

  1. Mix flour and sugar, then rub in cold butter until crumbly.
  2. Add egg yolk and cold water, form dough, and chill for 30 minutes.
  3. Roll out dough and press into tart pan. Prick base and bake at 180°C (350°F) for 15–20 minutes. Cool completely.
  4. Beat cream cheese and sugar until smooth, add vanilla extract and heavy cream, mix until fluffy.
  5. Spread filling over cooled crust.
  6. Arrange strawberries on top.
  7. Warm strawberry jam and brush over fruit for glaze.
  8. Chill tart for at least 1 hour before serving.

  • Add lemon zest for extra freshness.
