- 4 boneless, skinless chicken thighs
- 1 medium head cauliflower, grated into rice
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small zucchini, chopped
- 1 cup broccoli florets

- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp chili flakes (optional)
- Salt and pepper to taste
- ¼ cup grated Parmesan cheese (optional)
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Instructions
- Grate cauliflower into rice and set aside.
- Heat 1 tbsp olive oil, season and cook chicken 5–6 mins per side. Remove.
- Sauté garlic, bell peppers, zucchini, and broccoli 5–7 mins.
- Stir in cauliflower rice, cook 5 mins. Season with salt, pepper, chili flakes.
- Slice chicken, return to skillet, mix gently.
- Top with Parmesan, parsley, and lemon juice. Serve warm.
