Description

These Flaky Strawberry Scones with Vanilla Glaze are tender, buttery, and bursting with fresh strawberry flavor. A perfect treat for breakfast, brunch, or afternoon tea.


Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (115g) unsalted butter, cold, cubed
  • 2/3 cup (160ml) heavy cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh strawberries, chopped
  • For the glaze: 1 cup (120g) powdered sugar, 2 tbsp milk, 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray.
  2. Mix flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Whisk cream, egg, and vanilla. Fold into dry ingredients gently.
  5. Fold in chopped strawberries.
  6. Shape dough into 1-inch round; cut into wedges or circles.
  7. Place on tray, brush tops with cream, bake 18-20 min.
  8. Mix glaze and drizzle over warm scones.

Notes

Keep butter cold for flaky texture. Don’t overmix the dough. Serve warm for best flavor. Can freeze unglazed scones for 3 months; glaze after baking.
