- 1/4 cup (50g) granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup (115g) unsalted butter, cold, cubed
- 2/3 cup (160ml) heavy cream
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (150g) fresh strawberries, chopped
- For the glaze: 1 cup (120g) powdered sugar, 2 tbsp milk, 1/2 tsp vanilla extract
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray.
- Mix flour, sugar, baking powder, and salt in a large bowl.
- Cut in cold butter until mixture resembles coarse crumbs.
- Whisk cream, egg, and vanilla. Fold into dry ingredients gently.
- Fold in chopped strawberries.
- Shape dough into 1-inch round; cut into wedges or circles.
- Place on tray, brush tops with cream, bake 18-20 min.
- Mix glaze and drizzle over warm scones.
Notes
Keep butter cold for flaky texture. Don’t overmix the dough. Serve warm for best flavor. Can freeze unglazed scones for 3 months; glaze after baking.
