Description

This Fresh Strawberry Tart Recipe features a buttery crust, silky vanilla custard, and juicy fresh strawberries glazed to perfection. It’s a simple yet elegant dessert perfect for any occasion.


Ingredients

  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 cup (115g) unsalted butter
  • 1/4 cup (50g) sugar
  • 1 egg yolk
  • 2 tbsp cold water
  • 1 cup (240ml) milk
  • 1/4 cup (50g) sugar
  • 2 egg yolks
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • 2 cups fresh strawberries
  • 2 tbsp apricot jam

Instructions

  1. Mix flour and sugar.
  2. Rub in butter until crumbly.
  3. Add egg yolk and water to form dough.
  4. Chill dough for 30 minutes.
  5. Bake crust at 180°C for 20 minutes.
  6. Heat milk.
  7. Whisk yolks, sugar, and cornstarch.
  8. Combine with milk and cook until thick.
  9. Add vanilla and butter.
  10. Cool and spread into crust.
  11. Add strawberries on top.
  12. Brush with apricot jam.
  13. Chill before serving.

Notes

Keep butter cold for a flaky crust. Strain custard for smooth texture. Assemble close to serving time. Use ripe strawberries for best flavor.
