Ingredients
2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, softened
1 ½ cups granulated sugar
1 large egg
2 teaspoons vanilla extract
2 tablespoons milk
½ cup rainbow sprinkles
12 chocolate squares (milk or dark, your choice)
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
In a large bowl, cream butter and sugar until light and fluffy. Add egg, vanilla, and milk.
Gradually mix in dry ingredients until a smooth dough forms.
Scoop tablespoon-sized dough balls. Flatten slightly, place a chocolate square in the center, then roll back into a ball.
Roll each dough ball in rainbow sprinkles to coat fully.
Place on the prepared baking sheet, spacing 2 inches apart.
Bake for 10–12 minutes, until edges are lightly golden.
Cool on the tray for 5 minutes, then transfer to a wire rack.
Notes
Swap rainbow sprinkles for seasonal colors (red/green for Christmas, pink/red for Valentine’s, etc.).
You can use mini chocolate bars or caramel squares for a fun variation.
Store cookies in an airtight container at room temperature for up to 5 days.
