Description

I make this gluten-free cherry clafoutis with fresh cherries, eggs, milk, and gluten-free flour for a soft, custard-like French dessert that melts in your mouth. It’s simple, comforting, and perfect for family gatherings or cozy afternoons.


Ingredients

  • 300 g fresh cherries (pitted)
  • 3 large eggs
  • 100 g granulated sugar
  • 120 ml whole milk
  • 80 g gluten-free flour blend
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 20 g melted butter
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 180°C and grease baking dish.
  2. Spread pitted cherries evenly in dish.
  3. Whisk eggs and sugar until light and fluffy.
  4. Add milk, vanilla, almond extract, and melted butter.
  5. Mix in gluten-free flour and salt until smooth.
  6. Pour batter over cherries evenly.
  7. Bake for 35–40 minutes until golden and set.
  8. Cool slightly and dust with powdered sugar before serving.

Notes

Let the batter rest for 10 minutes for a smoother texture. You can substitute cherries with berries. Store in the fridge for up to 3 days and reheat gently in the oven.
