- 3 large eggs
- 100 g granulated sugar
- 120 ml whole milk
- 80 g gluten-free flour blend
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1/4 tsp salt
- 20 g melted butter
- Powdered sugar for dusting
Instructions
- Preheat oven to 180°C and grease baking dish.
- Spread pitted cherries evenly in dish.
- Whisk eggs and sugar until light and fluffy.
- Add milk, vanilla, almond extract, and melted butter.
- Mix in gluten-free flour and salt until smooth.
- Pour batter over cherries evenly.
- Bake for 35–40 minutes until golden and set.
- Cool slightly and dust with powdered sugar before serving.
Notes
Let the batter rest for 10 minutes for a smoother texture. You can substitute cherries with berries. Store in the fridge for up to 3 days and reheat gently in the oven.
