- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a medium bowl, toss strawberries with 1/2 cup sugar and lemon juice. Set aside to macerate for 10–15 minutes.
- In a separate bowl, mix gluten free flour, 1/4 cup sugar, baking powder, and salt.
- Stir in melted butter, milk, and vanilla until smooth to form the batter.
- Pour batter into prepared baking dish and spread evenly.
- Top with macerated strawberries, distributing juices over the batter.
- Bake for 35–40 minutes until the cobbler is golden and a toothpick inserted in the batter comes out clean.
- Let cool slightly before serving. Optionally, serve with whipped cream or vanilla ice cream.
Notes
For extra flavor, sprinkle a little cinnamon over the strawberries before baking. You can substitute almond milk for a dairy-free option. Store leftovers in the refrigerator for up to 3 days.
